INGREDIENTS • 6 cups fresh baby spinach • 1½ cups fresh strawberries, hulled and sliced • ¼ cup red onion, thinly sliced • ¼ cup feta cheese, crumbled (optional) • ¼ cup pecans or almonds, toasted • ¼ cup sunflower seeds (optional) FOR THE DRESSING • 3 tbsp extra virgin olive oil • 2 tbsp balsamic vinegar • 1 tbsp honey (or maple syrup for vegan option) • 1 tsp Dijon mustard • ¼ tsp salt • ¼ tsp black pepper HEART HEALTHY RECIPE STRAWBERRY SPINACH SALAD As the weather warms up, fresh and vibrant meals are ideal for light and healthy eating.
